Hello everyone
Here in Argentina, it is known as "cuchilla" instead of "knife" because it is distinguished from the latter because the sides are parallel, instead of forming a triangle. It is used by butchers, in domestic cooking, by bettors.
It seems to me that it has a false "button", which has been added, like the cape, profusely decorated, to give it importance. Regarding the inscription, I cannot comment on anything

it looks definitely a blade which was , at some point, repurposed but started its like as an knife that was used , as Fernando says, as a Kitchen or Butcher knife.
The hilt is very nice for an utilitarian knife, I am not sure it could be called a Gaucho Knife.
I have found other knives marked Shuller Solingen (if you look up these two terms ), also those seem to be located in South America.
I see Machetes en other types of knives ( all for sale so I can't publish pictures)
